Finally found a Filipino style Pork BBQ marinade recipe for keeps!
Ingredients:
2 lbs Pork Shoulder or Pork Belly. I prefer combination of both since pork belly has mostly fats.
Minced Garlic
½ cup Soy Sauce, low sodium preferred
¼ cup Lemom juice
½ cup banana catsup
1 can Sprite, some people like it ginger ale or 7-up
½ cup brown sugar
1 tsp salt or seal salt preferred
Freshly ground pepper
Bamboo skewers
Direction:
1. For the marinade, mix the minced garlic, soy sauce, lemon juice, banana catsup, sprite, salt and ground black pepper in a bowl.
2.Separate about half a cup of marinade plus the brown sugar for glazing. Sugar tend to make the meat hardened so it’s best not to include it on marinating the meat.
3. Pour the remaining marinade in a pork and refrigerate overnight.
4. Soak the skewers into the water for about half an hour before using the skewers
5. Pre-heat the grill and grill the bbq about 10-15 mins each side, rotate the bbq and glaze with the separated marinade.
Note: Best to have a little bit of birds eye chili on the marinade for a kick of spiciness. Serve a salad on the side on the dining table for healthier balance diet, like Papaya salad, Eggplant Salad or Cucumber and Red radish.
